This must be as final as can be. As a result of a direct question to Guinness World Records about Paddington and Edgware Road counts, I got the following response (after only 6-7 weeks!):
GWR wrote:Point 2 of our guidelines state that:

"Stations which are geographically separate and not linked but which have the
same name must each be visited. This applies to Shepherds Bush and Edgware
Road."

As the stations Paddington and Hammersmith are separate buildings with the same name, they do count as two stations each. So Hammersmith are 2 and Paddington are 2 stations.

Go Guinness! I also got a question answered recently on the third time of asking (stretching over several months) Didn't like the answer much, but at least I got one...
